In 1915, Sylvain Claudius Goy recorded the first-known French version of the croissant recipe in a French cookbook. Instead of brioche dough, as August Zang used when he originally brought the pastry to France from Vienna in 1839, Goy transformed the recipe to use a laminated yeast dough. Lamination involves folding butter and dough together to create thin, flaky layers of pastry.

Zang, an officer from Vienna, opened the first Viennese bakery called Boulangerie Viennoise in Paris and introduced French people to Viennese baked goods like the kipferl which later became the croissant. His pastries soon became all the rage in Paris, though it would not be until the early 20th century that such products would be called viennoiserie, meaning things in the Viennese style.

Invented in 1832 by Franz Sacher, a 16-year-old apprentice chef in Prince Metternich’s kitchen, this dense chocolate cake layered with apricot jam has become an iconic Austrian dessert. The original cake was created when the head chef fell ill and young Sacher had to develop a new dessert for important guests.

The two-layer chocolate cake filled with jam gained fame across Austria-Hungary. In the Middle Ages, the Milanese aristocracy celebrated Christmas with three large round loaves of sweetened wheat bread, which became officially codified in a 1395 decree stating that all bakeries must make pan de ton, or “bread of luxury,” available to all citizens during the Christmas season.

Its modern origin legend dates back to the 15th century court of Ludovico Sforza, Duke of Milan. As the story goes, during his sumptuous 1495 Christmas banquet, the court’s dessert centrepiece was ruined, so a creative young cook named Antonio came up with a sweet enriched brioche bread filled with raisins and candied citrus peel. The Duke so loved this creation, he dubbed it “Pan del Toni” or Tony’s Bread, which eventually became known by its modern name – panettone.

5.  Black Forest Cake  – Germany

Named after the picturesque Black Forest region in southwest Germany, this cake features layers of moist chocolate sponge cake stacked with whipped cream and sour cherries. In 1915, Josef Keller, an apprentice baker working at Café Agner in the spa town of Bad Godesberg, is said to have first created the cake featuring the classic flavours and look of the Black Forest region.

According to local lore, the cake’s distinctive colours – the black cake, red cherries, and white cream – were inspired by the traditional costume worn by women in the Black Forest with its black A-line dress, white blouse, and red bolero. The cake soon became a signature dessert at Café Agner known as “Schwarzwälder Kirschtorte” (Black Forest Cherry Cake) and its popularity eventually spread across Germany and beyond.

Created in Australia in the late 19th century, these small sponge cake cubes dipped in chocolate icing and rolled in desiccated coconut have become a classic afternoon tea treat. The early origin story credits Armand Galland, the French-born chef working for the Queensland Governor Charles Cochrane-Baillie, 2nd Baron Lamington and his wife Lady Lamington.

Galland is said to have invented the coconut-coated cubes now known as “lamingtons” while working as their chef de cuisine at Queensland’s Old Government House in Brisbane during the 1890s. The cake was likely named after Lady Lamington who was known to frequently host elegant tea parties. Though details are debated, Galland’s creation caught on as a tea-time staple across Australia.

A rich, coffee-flavoured Italian dessert, tiramisu features layers of coffee-soaked crisp ladyfingers encasing lightly sweetened mascarpone cheese cream. Its origins date back to the 1970s in the town of Treviso near Venice. While the popular restaurant Le Beccherie has been widely credited as tiramisu’s birthplace, it was restaurant owner Ado Campeol’s wife, Alba, and one of their chefs, Roberto Linguanotto, who invented the dessert.

They experimented with the ingredients on hand until landing on the perfect combination of flavours and textures. Campeol then put it on the menu at Le Beccherie as “Tiramisu” meaning “pick me up.” It quickly became a favourite after-dinner dessert for patrons.
